Cooked my first turkey day dinner. It was delicious. Thank God for FoodNetwork.com.
For the turkey, I just added an apple, half an onion, and a cinnamon stick for the aromatics. I wanted to add fresh rosemary and sage into the cavity, but I forgot to get it at the store. Too lazy to go back. Then, I rubbed olive oil and poultry seasonings all over the turkey. Baked it into a 500F oven for 30 minutes to brown the skin, then foiled the breasts, and continued roasting for 1 hour and 30 mins at 350F. I think the turkey would have been more juicier if I brined it the night before, but I was too lazy. Haha. Came out pretty good to me. =) Thanks to Alton Brown. He’s one of my favorite chefs on the Food Network.
After the turkey was done, I used the dripping for the gravy. Collected the juices in a bowl (strained). Heated up some butter and olive oil in a medium sauce pan. Added about 3 tablespoons of flour in the pan. Stirred and blended well to create a roux. Add the turkey juice. Blended. Add about a cup of chicken stock. Stirred until smooth. Seasoned with salt and pepper. Again…I would have added some herbs, but didn’t have any.
The vegetables we had were the microwavable kinds. Of course homemade is better, but no need to stress over all that work. So we got the steam and mash potatoes and steam vegetables. Pretty good. =) Stuffing we had was from Stove top. Didn’t stuff the turkey with stuffing because that takes longer for the bird to cook through.

Dessert: Semi-homemade apple pie. =) I have a really good pie crust recipe, but didn’t feel like making it. So I bought an already made pie crust at the market. Just open and unroll. So convenient. =) Used 5 Gala apples, cored, peeled, and sliced. Mixed with 1/2 cup of sugar, tablespoon of flour, 1/2 teaspoon of cinnamon, 1/4 teaspoon of nutmeg. Poured the apples in the crusted pan. Added about two tablespoons of cold butter pieces on top at random places. Made a lattice pattern for the top crust. Crimped the crust. Add an “I heart you” =P. Brushed milk over the crust, I would have used an egg wash, but didn’t have eggs. Egg wash worked better for that shine. Hehe. Baked in a 375F oven for an hour and 15 min. I like my crust really brown. Yummy. =)
